Nine Hundred Bins, One True Count

The cellar is inventory with vintages, bins and bottle-level tracking. A bottle sold decrements the bin, a corked bottle is written off against a reason, and the by-the-glass pour depletes from the open bottle rather than from a guess at the end of the week.
